Mini Magnum Cake Pops





I stumbled across this Mini Magnum cake/ice pop Mould on one of my usual ‘shopping for baking equipment days’ It was just an impulsive buy because I had to have it 🙈 better than a pair of shoes or a bag that cost in excess of £300 right? 🤣  (FYI, Not all is lost, I will have my Louboutins one day!) 

Anyway..

I never really understood the whole ‘cake pop’ thing, why would you cook a perfectly good cake only to break it up? 🤷🏼‍♀️ Plus... I wasn’t going to use it for ice cream as I’m not a massive fan of the whole cold stuff on my teeth, one of the only times that’s tolerated is when I’m sat below the castle in Malcesine, Lake Garda with the Boyfriend and enjoying a Nutella Gelato, but that’s a whole other story!! 


Recently during one of the many many days of lockdown, I was soo bored, I decided to sort out the baking cupboard in the kitchen (29 and cleaning cupboards.. I did say I was bored) and oh behold I found the Mould (poet or what?) 📖 

I sat down and thought I haven’t made a cake pop and mybe I’m too judgemental. If I’m going to make it then it HAS to be done right! (considering it’s complete sacrilege to break up a good cake!)🧁 


Onto the experiment
Being a mini mould for only 4 cake pops.. there is no point in making a full batch of cakes so i found this one online. I added some freeze dried raspberries to the mix, it turned out great for the quantity I needed.

For the mould, i used 100g bar of white chocolate and some left over white chocolate candy melts. So about 120g in total. This was enough to cover the moulds twice. Plus the back and to stick my decorations (in my case more raspberries) 
I would have used all chocolate if I didn’t have candy melts. (Same quantity)

I used two coats of chocolate and froze for 5 mins each time. Squished in the cake pop mix (cake and frosting measurements from link above) and covered the backs with chocolate, scraping off any excess. Put them back in the freezer for another 5 minutes.

Removal

I have to be honest, this was the part I was most dreading, but nope.. it was a breeze. Loosen  around the edges by gently pulling the mould then pop the top end and pull through and supporting the stick. The mould is such good quality and nothing stuck (bonus)! I actually did a happy dance 💃🏼 

Decorating: I kept it simple & just piped a few lines of chocolate, sprinkled with raspberries and some edible glitter and voila! Beautiful cake pops that actually taste really good too! 

Moral of this post: Don’t judge too early and don’t be afraid to try something new, you might be surprised!
