My cadbury Dairy Milk Cupcakes
I recently made these Cadbury Dairy Milk cupcakes and OH MY GAWD! So lush. You have to give them a go! They are not too difficult either! Most of my cakes are a throw it all in, whisk it up and hope for the best type of cake. I don’t see the point in creaming the butter and sugar and uhh who has time for that when you can just have the same result??
My sponge is a Slight twist on Mary Berry’s chocolate cupcake recipe. I always add a pinch of salt to chocolate sponge plus my own twist is add a spoonful of vegetable or sunflower oil to the cocoa powder and water mix! Measurements stay the same otherwise!
🧁🧁🧁 cupcakes:🧁🧁🧁
3 large eggs.
175g caster sugar,
175g unsalted butter,
115g self raising flour,
40g cocoa powder made into a paste with approx 4 tbsp hot water (not boiled, leave to cool slightly) you can add a little coconut/vegetable oil if you wish just a teaspoon full- this is optional
1 level tsp baking powder
Pinch of salt (optional)
Method: make the cocoa paste first and leave to cool. Once cooled add all ingredients into one big bowl and whisk together. No need to cream butter and sugar. Just put it all in. Whisk for a few minutes and go around edge of bowl with a spatula to get any mix off sides. Whisk again until mix is fluffy and light. Spoon into 12 cupcake cases and bake for 18-20 mins until cooked. (Depending on your oven i use gas 5)
🍫 🍫🍫Chocolate ganache🍫🍫🍫
100ml warmed (not boiling)double cream poured over 100g dairy milk chocolate. Mix well and leave to cool. Add more cream if needed to make sauce like consistency.
🧁🧁Milk chocolate Buttercream: 250g unsalted butter. (Please use real butter)250g icing sugar sifted (to avoid it being stuck in your piping bag). 200g dairy milk chocolate- (melted)
whisk butter until fluffy, gradually add in 3/4 icing sugar a bit at a time. (Use a little milk if you need to, no more that a spoonful) then once this is mixed add in chocolate a bit at a time and keep whisking. If your mix is a little too runny add in more sugar until you have used the full 250g. Put into fridge for 5-10 mins just to cool the chocolate down. Take back out and set aside until it’s needed for piping)
🧁🧁🧁Decorating🧁🧁🧁
Hollow out the centre of your cooled chocolate cupcake. Add in a spoonful of your sauce & pop lid back on)
Using a large star tip. Pipe a tall swirl of buttercream onto the top of the cupcake. Add your dairy milk pieces and more sauce and some more cherries and dust with icing sugar.
